Effect of three pre-treatments of banana peel for obtaining glucose syrup by enzymatic hydrolysis

Abstract

The aim of this study was to compare three pretreatments (grinding, milling + hydrothermal process, grinding sodium hydroxide + 1 [%] ) applied to peel ripe banana and its effect on the production of dextrose syrup by enzymatic hydrolysis with the fungus Trichoderma viride. 9/2 crops (bananas ground shell and purified water) were prepared at different substrate concentrations (40, 50 and 60 [%]), factor A; under the three pretreatments factor B. Subsequently conidia were inoculated with the fungus Trichoderma viride at a concentration of 0.4 g/L. Treatment showed higher glucose concentration treatment was F (60 [%] shell ripe banana with the ground + hydrothermal pretreatment process) with 5.6 ± 0.3 g/L.
